Using a grey card to set white balance is also a video trick that can speed up the guess work if you're trying to get WB right in camera.
Back button focus, never worry about AI-servo or having to know where more than one button is while your in a hurry to get those shots!

I'm a Nikon Shooter but I'm sure Canon has something similar. I found that I have the best control over my Camera by putting everything into separate buttons. I do back-focusing (using the AE-L/AF-L) button to pull focus and not the half press. Then I use the half press for AE-L and in aperture prio. mode I use the back-wheel to exposure correct easly without taking my eye of the finder. By using backfokus I can use servo (AF-C) in almost every situation and just keep pressing as long as needed.
