I think you forgot to mention one very important part. Where do you focus? Normally you focus for the light. But when bracketing, correct me if I'm wrong, you focus for the mid-tones.

You are forgetting that people will have their camera on auto ISO. So the camera can and will change the ISO if the shutter or aperture range is restricted. I know my Nikon d810 in aperture priority mode changes the ISO not the shutter speed. And my camera definitely has exp bracketing in manual mode.
In AEB mode how to set exposure time in sequence for hdr in 360 photo ( with fish eye lens ) shooting ?
